French fries :p

Most of us enjoy eating french fries, commonly known in Mauritius as “chips”. These ‘croustillant’ sticks made from potato sold by KFC and McDonalds….well they are not the same when home-made
There are several reasons why you want to make them at home instead of buying them…among which are the prices (damn hot for some fried potatoes) and the distance…(i live at lescalier in the south, and the nearest kfc is at mahebourg i think…30mins by car).
But recently, i made a search online for recipes about making french fries at home :p And…now ladies and gentle, the secret of french fries, revealed :
In order to have that ‘croustillant’ outer layer and the soft part inside, the trick is to double fry your fries
- To begin with, prepare your potato (peel and slice into sticks)
- A very important step now, is to put the sticks in cold water (use some ice cubes). Let them soak for about 15minutes.
- Drain out the water and put the sticks in pre-heated hot oil(i wont give uou the oil temperature, cause i’ve not seen anyone till now checking oil temperature)…allow to fry for a few minutes. Make sure you don’t fry them completely, let’s say fry them mid-way.
- Remove your fries, and let them cool down on some kitchen paper, draining out the oil. [if you are in a hurry...like i am usually, you can use cold water to instantaneously cool down everything :p].
- Add some salt (according to taste) to the moist fries.
- Now, the second frying session, to make the croustillant part
Put your french fries in hot oil, this time allow to fry the whole way till you start seeing brownish edges and corners. - Remove your fries, drain out the oil and serve hot
My mum really enjoyed it when i tried this method of making fries…and asked me for more
